Salsify Sandwich Island
One of the lesser know root vegetables, this vegetable has never gained the popularity it enjoys in Europe, in the UK. The roots are not unlike a thin parsnip in appearance but are delicate in flavour which is delightful. It can also be cooked in much the same was as you would a parsnip.
Salsify is often referred to as the Vegetable Oyster because once cooked, it takes on the rich taste of oysters! It produces light brown skins with creamy white flesh. For best results, use a good soil. We don't recommens multi-purpose compost for any new seeds.

When to Sow Sandwich Island Salsify Seeds
Late March to early May.
Where to Sow
In growing site 2cm deep sow 3 seeds in groups at intervals of 15cm.
What to do next
Thin to a single seedling to each site as soon as possible and water regularly.
Roots can be left in ground until required. Clean roots for boiling or roasting and peel when cooked for best flavour.
