A particularly British vegetable because of its winter hardiness it is now reviving thanks to more imaginative use. Roast with the Sunday joint, or par-boil, roll in flour and Parmesan cheese and roast. Sow the seeds thinly in February up to April in drills 1cm deep with 30cm between rows where the crop is to remain. Parsnip should not be transplanted. Thin gradually to 15cm between plants. Keep weed free and water regularly to establish. Roots can be left in the ground and dug as required from late October onwards.
